Every user and every Odoo service gets exactly the PostgreSQL role and permission set their job requires — nothing more. Nobody has blanket access to data they don't need to touch.
Encrypted in transit and at rest
Database connections run over SSL/TLS, and sensitive fields — passwords, financial records — are separately encrypted at rest, not left readable to anyone with database access.
